Ingredients:
Whole grain amaranth.
This ancient grain was considered a staple food in the Inca, Aztec & Mayan civilizations. It is naturally gluten-free, high in fiber, antioxidants, and micro-nutrients.
Preparation: Rinse well and add 1 cup grain to 3 cups spring water and simmer for 25 minutes on low heat. Cover and stir; cook until tender or to desired texture.
