This recipe yields 6 servings.
Ingredients
- 1 cup quinoa
- 2 cups spring water
- 1 teaspoon sea salt
- 1 cup cooked chickpeas
- 1/2 cup cucumber chopped
- 1/2 cup cherry tomatoes sliced
- 1/4 cup cilantro chopped
- 1/4 cup red onion chopped
- 1/4 cup black olives sliced
- 1 tablespoon avocado oil
- 1 tablespoon key lime juice
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne
Equipment
- Medium Saucepan
- Large bowl
Directions
- Rinse quinoa well until water runs clear.
- Bring 2 cups of spring water to a boil over high heat in saucepan.
- Stir in quinoa and reduce heat to low and simmer for 15 minutes. Remove from heat.
- Combine all ingredients into large bowl and toss. Serve warm or chilled.
