This recipe make 6 – 8 servings.
Ingredients
- 4 cups cooked Quinoa
- 1 cup Zucchini, chopped
- 1/4 cup Red Bell Peppers, diced
- 1/4 cup Green Bell Peppers, diced
- 1/4 cup Yellow Bell Peppers, diced
- 1/2 cup Spring Water
- 1/2 cup Red Onion, diced
- 1 Roma / Plum Tomato, diced
- 2 tbsp. Grape Seed Oil / Olive Oil (optional)
- 1 tbsp. Onion Powder
- 2 tsp. Sea Salt
- 1 tsp. Basil
- 1 tsp. Oregano
- 1/2 tsp. Cayenne Powder
Directions
- Add oil to a large pan / skillet at a medium – high heat.
- Saute vegetables and seasonings for 5 – 10 minutes.
- Add quinoa and water, then cook for another 5 minutes.
