Ingredients

Kale Filling
This will fill about 6 spring rolls.
Measurements:
- 3 cups Kale
- 1/2 cup red onions, sliced
- 1/2 of red pepper, thinly sliced
- 1 tsp. Onion powder
- 1 tsp. Sea Salt
- 2 tsp. Grapeseed Oil
Directions:
- On a medium heat, add all ingredients to skillet and saute for 5-7 minutes until the vegetables get a little tender.
Avocado Filling
This will fill about 5-6 spring rolls depending on avocado size.
Measurements:
- 1 Avocado
- 1 tsp. Lime Juice
- 2 tbsp. Red Onions, diced
- 2 tbsp. Green Peppers, diced
- 1 tsp. Onion Powder
- 1/2 tsp. Sea Salt
Directions:
- Cut avocado in half, remove seed, then scoop out the insides into a medium sized bowl.
- Add other ingredients to bowl, then mash and mix together.
Spring Rolls
This recipe yields 12 spring rolls.
Measurements:
- 2 cups Spelt Flour
- 1 tsp. Sea Salt
- 1 tsp. Onion Powder
- 1/3 cup Grapeseed Oil
- 1/2 cup Spring Water
Directions:
- Add flour and seasonings to food processor and blend for 10 seconds.
- Slowly pour in grapeseed oil while mixing.
- Slowly add water while mixing until the dough forms into a ball.
- Flour work area and knead the dough, then separate the dough into 5 parts using the food scraper.
- Roll out dough into a thin circle, then use food scraper to cut out a 6-inch square. Form remaining dough into a ball and repeat the process.
- Place parchment paper in between cut squares to keep them from sticking to each other.
- Brush corners and edges of each square with aquafaba (or spring water) before rolling to help it stick together.
- Add about 2-3 tablespoons worth of filling to each roll.
- Placing the dough like a diamond, tuck in filling with one corner, fold in right and left sides to meet in the center, then roll forward. The roll should be tight enough to pick up without falling apart.
- Lightly coat skillet with grapeseed oil while on medium-high heat.
- Using tongs, place rolls into skillet and cook on each side for 1 minute.
- After both sides are done, place them upright on each side for 1 minute so all 4 sides get cooked.
- Serve with our Orange Ginger Sauce and enjoy your Alkaline Electric Spring Rolls!
